How to brew with Moccamaster

Whether you’re brewing with the KBG Select, KBGT, or Cup-One, the basic brewing principles remain the same. If you’re new to filter coffee, this guide will take you through the process step by step to help you brew a delicious cup of coffee with your Moccamaster.

Start with the Right Ingredients

Brewing great coffee requires more than just coffee beans and a filter. To allow the natural aromas and flavours of your coffee to shine through, we recommend using white filter paper. Unlike brown filter paper, white filter paper is flavour-neutral and helps prevent any papery taste from affecting your coffee.

The right grind size is also essential. Whether you prefer the smooth and delicate character of Arabica beans or the stronger flavour of Robusta, choosing coffee that is ground specifically for filter brewing will help you achieve the best results. For the freshest flavour, freshly ground coffee is always the best choice. You can easily grind your beans at home using the Moccamaster KM5 Coffee Grinder.

Water is just as important as the coffee itself. Fresh, clean tap water or spring water is ideal for brewing. Of course, you’ll also need the right amount of coffee.

For the KBG Select, we generally recommend brewing at least 4 cups for the best flavour. With the KBGT, we recommend brewing a full thermos, as this model does not have a half-pot or full-pot function. When using the Cup-One, fill the water reservoir to the first line and use one level scoop of coffee.

For the KBG Select and KBGT, use one level scoop of coffee for every line of water on the reservoir:

  • 1st line (2 cups): 1 scoop
  • 2nd line (4 cups): 2 scoops
  • And so on.

With a Moccamaster, you can brew a full pot of coffee in approximately 6 minutes, while the Cup-One brews a full mug in around 4 minutes.

This brewing time helps extract the best aromas and flavours from your coffee. Moccamaster coffee makers are designed to provide consistent brewing time and temperature, helping you achieve a balanced cup every time.

The coffee is brewed at a temperature between 92°C and 96°C, which is considered the optimal range for coffee brewing. Brewing at a temperature that is too high can result in bitter flavours, while brewing at too low a temperature can make the coffee taste sour.
