The detail that matters most is the sifter. Matcha clumps in the tin, and clumps are what make a bowl gritty no matter how hard you whisk. Sifting before water touches the powder is the single step that separates a smooth, creamy bowl from a lumpy one – and most sets leave it out.

How to Use It

• Sift roughly 2 g of matcha (1–2 spoons) through the sifter into the bowl – sweep the powder gently across the holes with the back of the spoon rather than pressing down.
• Add water just off the boil, around 80°C. Boiling water scorches matcha and turns it bitter.
• Whisk briskly in a W or M motion until a fine, creamy foam forms on the surface.
• Drink from the bowl, or pour through the spout over 150 ml cold milk or 230 ml steamed milk for a matcha latte.
